Tasting Notes: The Posca Bianca is a natural wine from 100% Pignoletto, an indigenous grape to the Emilia-Romagna region of Italy. The winemaking avoids the practices of fining and filtration before bottling, known as "sur lie" (common in Champagne and Muscadet). Therefore, a slight haze remains. This strengthens the structure and gives the wine an energetic quality on the palate. But there is nothing inaccessible about this ‘natural wine’. It is immediately appealing and reveals layers of aroma and flavor. The Posca Bianca is a wine designed to be served with a meal. Its body, acidity, and texture allow it to bring the best out of a very wide range of food. Because its flavors echo the land from which it comes, taste elements that include an earthy or umami component (mushrooms, arugula, and sushi, for instance) will resonate. -Giacomo, Eataly Los Angeles Wine Director
