According to biodynamic teachings, the planet’s health, and therefore the health of its vineyards, are inextricably linked. The vineyard is not separate from its surroundings, but rather an entire ecosystem in and of itself. Keeping with this holistic philosophy, biodynamic winemakers focus their efforts on biodiversity. Cover crops are planted between rows of vines to encourage soil regeneration and to distract pests, and many vintners use livestock as wandering weed whackers. Their manure comes in handy as well, providing a natural fertilizer for the soil, and herb poultices fight mold and fungi in place of copper and sulfur mixtures. Biodynamic-practicing estates believe that these techniques result in healthier soil and, therefore, healthier grapes.
In the cellar, winemakers often use indigenous yeast, believing this to enhance the finished wine’s flavor and sense of place. Additives are forbidden with the exception of small doses of sulfites to be used as a preservative, allowing these unique wines to weather the long, overseas journey from vineyard to glass.
