Tasting Notes: The Bele Casel Prosecco Vecchie Uve, is named for the oldest, rarest grapes in the Monfumo vineyard in Asolo. The vineyard iteslef is nearly 100 years-old, and some of the varieties planted are rarely found anywhere else in the Prosecco Zone. These varieties include, Rabbiosa, Marzemina Bianca, Perera, Bianchetta Trevigiana, and old-vine Glera. The vineyard is certified organic. This Extra Brut sparkling wine was fermented with no filtration or added sulfites and aged in tank for 15 months before the second fermentation in pressurized tank (Martinotti method), and aged on its lees for 15 months before bottling. The wine is the color of pale corn silk, with early harvested pears, ginger, and lemon zest moving in and out of the foreground, along with fleeting suggestions of honeycomb, pine nuts, and white flowers as the nose develops over time. On the palate, the wine is elegant, complex, and drier than many Brut Champagnes, with palpable saline minerality seasoning vibrant, white orchard fruit, along with a persistent creamy mousse, and a refreshing, citric finish that goes on and on.
