Tasting Notes: Named for the northern block of Castello della Sala where it's grown, a single high-elevation vineyard at 520 meters overlooking the Paglia river near Orvieto. First produced in 2019 at fewer than 6,000 bottles worldwide, Nibbio sits above even Cervaro della Sala as the estate's rarest, most ambitious white: fermented and aged in oak for twelve months, then held in bottle for two and a half years before release.
Sleek and restrained, with wild fennel and grapefruit aromas over a long mineral finish, a texture closer to white Burgundy than typical Tuscan white.
